Carob Chocolate Chip Cookies.
Serves: Makes 12 cookies

125g unsalted butter, softened
1/2 cup brown sugar or coconut sugar
1/4 cup caster sugar
1 teaspoon vanilla bean essence
1 large egg
1 3/4 cups self raising flour
Pinch of sea salt
80g (1 bar) @thecarobkitchen Carob Milk Bar
Preheat an oven to 180°C bake and line a large baking tray with parchment paper.
Using an electric beater, beat the butter, sugars & vanilla essence on a medium setting until pale and creamy.
Beat the egg into the mixture on a medium setting.
Fold in the remaining ingredients.
Roll one tablespoon of dough into a ball between the palms of your hands.
Place the balls onto the baking tray and press down lightly with a fork.
Bake the cookies in the oven for approximately 10-15 minutes or until browned and golden.
Remove from the oven and allow to cool on the baking tray for 10 minutes before transferring to a wire rack to cool completely and firm up.
